Madeira Cake

I felt like baking yesterday and so I scoured my mum's recipe book for an easy-to-make-cake recipe.

Anyway, I came up with this cake which was called a Madeira Cake. To me, it's pretty much like a butter cake but I don't know why it has such a fancy name.

Having not baked for a really long time, I had forgotten things like beating in the eggs into the mixture little by little. I just dumped all the eggs in at one go. And the flour went in the same way. My mum was quite appalled at the way I was doing everything wrongly. Haha.

But surprisingly the cake didn't turn out too bad considering my unorthodox ways of preparation. At least it looked decent. Well, it tasted decent too. The sweetness was just right, but I think it turned out a tad dry. To think that the recipe said to bake for an hour! I took it out from the oven at 50min and it was rather dry already! Next time, I think 40min at 180 degree celsius is more than enough.

So yeah, there's my little creation. :)

hey the cake looks good! i love baking, but baking doesn't love me, so i always end up with really crap products. my very first ''cake'' was carcinogenic (seriously, it was all burnt) and when i tried pineapple tarts the other time, they turned out really salty. shucks. arghh! and i messed up my laptop!!! i spilt water on it and now it doesn't work so i have to use college computers *sob*

Is yours a conventional oven or a fan-forced oven? Depending on the type of oven you use, the time and temperature will vary. Anyway, your cake looks nice. I guess you can use it as bread if it is too dry.

eerrr....i'm not very sure. It's actually a microwave cum oven. I don't see a fan in it. So I'm guessing it works like a conventional oven.

And thanks. I'm surprised it turned out looking pretty decent. Haha.
