A frittata [frih-TAH-tuh] was what I had for lunch today. According to the Food Dictionary a frittata is "an Italian omelette that usually has the ingredients mixed with the eggs rather than being folded inside, as with a French omelette. It can be flipped or the top can be finished under a broiling unit. An omelette is cooked quickly over moderately high heat and, after folding, has a flat-sided half-oval shape. A frittata is firmer because it's cooked very slowly over low heat, and round because it isn't folded."
The frittata I had was a vegetarian frittata. There are many different kinds of frittatas and you can just about put in anything you fancy. For example, you can add sausage, ham, cheese, zucchini, mushrooms, potato, tomato, pumpkin, onions etc. It's really yummy!
I am a huge fan of eggs, and that's why I really like eating frittatas. I have never tried cooking it myself, but I should give it a try someday!
